My number 1 thing is unlimited skips, no ads and being able to download songs from Pandora. I would jailbreak just for those reasons alone.
Other things I have are 5 icons in my dock, a batman symbol instead of the at&t logo (which can be anything you want) and a bunch other little customizations that you can't do without it being jailbroken.
You could change your icon layout and the your theme of phone if you wanted to. The things you can do are almost endless. Google "best cydia tweaks" to get more examples.
