Other stores cut them, just not ours. We're wholesale and package ribeye in threes and strips in fours. No less,take it or get the fuck out. Pretty much only use the saw for pork chops and Hutt steaks. You're the only dude I ever talk about meat related shit with outside of work haha
Brooooooooo about that. No we don't. We receive the 10 pound tubes and then run them through our grinder. Anyway the case is about 80 pounds. Sometimes we sell them to almost exclusively restaurants since it's a good 45 cents cheaper by the pound. Out of nowhere our office made us put a sign that says the case price next to the regular packages. All it does is fucking confuse people and I'm not kidding, two, months later we get +20 people a day asking:
"where is the cheaper priced beef?" "oh so it will ring up this price at the register?" "what exactly is a case?"
At this point we laugh and tell them that it's 80 pounds and their eyes widen because they didn't expect that answer. And every fucking time they still ask "well can I get less for that price?"
We're two entirely different stores though. We have people pay to come in and shop wholesale, we don't off small amounts of anything and we don't cut to order. The one thing we do different than Costco is we will cut a cryo for you if you buy the whole thing or we will cut for large orders. I've had to work on 600+ steak orders before. Your store seems like more of a devout meat market where some old lady wants a pound and a half of ground beef and she can get it lol We'd politely tell her to go fuck herself.
Yeah we laugh about that shit. This is what our grinds look like. Take it or leave it, usually about 3.5-4.5 pounds based on price. Our price point is $16-$20 a pack.
Sometimes when we get towards the ends of the grinds and don't have enough to make full size pack we'll occasionally make a small pack that will get snatched up immediately but more often than not we will just make a massive pack that also gets picked up immediately.
