I have the 64 GB and it is probably the best piece of technology I have ever purchased. I have 45 GB of music, growing by maybe 200 mb a week decreasing every now and then, and I can still have some awesome video on it.
And that's why I want a huge amount of memory. I know I could probably eventually fill up a 64. But a 120 or 160? No fucking way. Plus, I'm running a budget and the iPod Touch is over $100 more than the 160 GB iPod Classic. I don't need apps and fancy shit, I just want a lot of memory for Music and Videos. I'm so fucking done with Microsoft's bullshit. My friend dropped his iPod in the toilet and Apple sent him a new one no problem.

iPod has the monopoly on the market, so everyone will make their accessories compatible with it.
I won't fill 64 gigs any time soon. As my music collection grows, I start to listen to some bands less and less. I find myself deleting gigs at a time, all the while adding a lot of albums.
I downloaded iTunes so that it's ready for my iPod when I get it on Tuesday, and it transferred all my Music onto iTunes, but is there any way for me to change it to list the Music by artists rather than albums?
right click on the name of the band and clink on "get info". Your gonna have to just type it the way you want it then it'll adjust by itself. For album covers, just google the picture and copy, then paste it in the artwork space. Or you could right click on the album title and click on "get album artwork". But, that doesn't work for all albums though.

1st question seems resolved.
Adding album covers is relatively easy if the band is well known. To do it quickly I highlight the album (album only, not the whole artist) and right click it. There should be an option to "Get Album Artwork" Press that, wait a sec and it should be there. If you keep track of your album artwork early on, it makes it much easier when you have a huge library.
For "merging artists" what I do is select all the songs by that artist and right click them, hit info, then under the artist and album artist sections put in the name of the artist.
